Cebicheria

An experience that brings the coastal cuisine of Peru.  Chef Julio’s father, was born in the northern Peruvian coast and owned a cebicheria during chef Julio’s infancy while living in Lima. Chef Julio also has traveled and eaten along the whole Peruvian coast.  Cebiches, tiraditos, causas, arroz con mariscos, etc.  Peru has one of the richest fishing grounds in the world, offering an incredibly varied seafood cuisine, and chef Julio can't wait to share it with you.

Criolla

Peru is influenced by a number of different migrant cultures that have put their own stamp on our own culture, music and of course, our cooking.  Imagine Spanish, Italian, Chinese, Japanese, African and Peru’s native cultures melding together to form one harmonious cuisine.  This is chef Julio’s heritage, and he is proud to bring this part of his life to your table.

Street food

Lima’s streets offer some of the best street food in the world.  Anticuchos, papa rellena, butifarras, picarones, arroz con leche, mazamorra, the list goes on.  Bites like these would make an amazing cocktail party, and one to remember.

Nikkei

Japan’s influence in Peruvian cuisine dates back to 1889, when nearly 7,000 Japanese miners and railroad workers, lured by the promise of jobs, traveled to Peru.  Upon arrival, they began cooking Japanese food with the Peruvian ingredients that were available to them, creating dishes that married the simplicity and precision of Japanese culinary techniques with the Andean tubers, chilies, and fresh seafood of Peru.  Tiradito, caracoles a la piedra, chita a la sal, pulpo al olivo are some of the traditional Nikkei dishes that emerged from this migration.  The combination of these two cuisines and the local and organic produce from Texas make an experience with endless possibilities.

Austin

Think Peru meets Austin Tx.  All of our knowledge of Peruvian cuisine, our developed Texas palate, and all of the produce that Austin’s farmers have to offer are put onto a plate.  Chef Julio-Cesar Florez has been cooking professionally in Austin for over 18 years.  His knowledge and experience allows him to create dishes that are both familiar, yet exotic at the same time.
